I could, but what's the benefit?

Why would you care about someone sniffing unencrypted data that already publicly readable?

Because the cookies with authentication info should not be in the clear. Because the login should not be in the clear. Because it avoids MITM modification of content (viewed or posted). And because it is the right thing to do?
